A family story

In 1964, Hubert Mons and his wife decide to sell cheeses in the markets of the region of Roanne... What could be more normal from true Auvergne people ?!
The seventies are prosperous and so is the trademarket. With their truck store, in the markets of the countryside, the small business becomes legitimate in the region.

In 1983, Hervé, the eldest son, set up the first sedentary shop in the Halles Diderot, in the heart of the city, after an internship with the biggest Parisian cheese makers. Then several will follow: Renaison, Montbrison...
But also through the creation of affinage cellars in Saint-Haon-le-Châtel

The company is growing and is known for its expertise. His brother Laurent joined him by taking over the operation of the iconic Halles Diderot shop. This union gives free rein to the entrepreneurial spirit of its natural manager : Hervé.
 

 

The export of products to multiple destinations will grow. Hervé will make the best use of his «sourcing» qualities to bring together in the range of cheeses, an exceptional offer for all customers who seek cheese exoticism.

In recent years, the company has opened up internationally and deals with more than 10 countries (Europe, the USA and Japan).
In 2000, Hervé won the title of Meilleur Ouvrier de France (MOF).

In 2001, Maison Mons created the Opus Caseus Concept training center, led by Laurent Mons. Hervé and Laurent were elected «Cheesemongers of the Year» by the gastronomic guide Pudlo France in 2002.

2005 The International Year :
It is the year of the creation of the first international competition of the cheese trade : «International Caseus Award».
Also, a partnership with the USA is concluded with a brand of specialized shops. This partnership involves a specific merchandising, creation and design of refining cellars in Vermont.

2006 : The Maison Mons finds its origins back by settling in the market of Borough Market, London and creates the company MONS UK represented by a young cheese maker from its training center, Mr Jonathan Thrupp.


2007: It is the opening of the «Maréchal» shop in the Halles de Lyon directed by Etienne Boissy (Meilleur Ouvrier de France 2004) also resulting from a long collaboration.

But above all, Hervé travels throughout France to search for the best products, looking for producers who still produce in a traditional way, with respect for ancestral expertise.That is why Mons is today the official supplier of many restaurants around the world and the reference in cheese specialties.
Mons keeps its role of retailer through shops focused on the expertise of the managers, and develops the export market thanks to the added value of its expertise.

 

La maison MonS conserve sa vocation de détaillant à travers des points de vente axés sur le professionnalisme des gérants, et développe son marché export grâce à sa gamme et à la valeur ajoutée de son savoir-faire.

2009 : On the right tracks. This is the year of a crazy project with the creation of a new

company : «La Compagnie d'Affinage des Caves de la Collonge». An old 180m long railway tunnel is rebuilt into exceptional affinage caves. This projects allows the company to give an almost exclusive typicity to the products.

2010-2011 : Strengthening - export trade. It is time for the consolidation of projects with a whole new travel sales team dedicated to the main foreign markets: USA, Europe, Middle East and Japan

2012: Towards the South. Maison Mons opens two new shops in the south of France : the Fromagerie du Cannet (with Philippe Caillouet, Meilleur Ouvrier de France Arts de la Table) and the Fromagerie du Passage in Aix-en-Provence, which is a shop and cheese restaurant concept.

2014 : Sourcing. Marked by the Auvergne terroir, its farmers and its animals, Hervé Mons is committed to a sustainable approach with a category of producers targeted to relaunch the production of milk cheeses of a traditional cow’s breed : Salers.


This exclusive and unique cheese has required a flawless investment, both financial and human.

2015 : Think Big! The Mons team embarks on a King Size challenge with the BIG project, namely a gigantic cheese tray set in the Tunnel de la Croix-Rousse in Lyon, for the Biennale Internationale du Goût. The result is a world record with 365 cheeses, weighing 2.4 tons, spread over 50m long. 

2015-2016 : The new caves. Large-scale work is underway in Saint Haon le Châtel, where new affinage caves are being built. The surface is douleded, and a unique concept is created and out under patent.
It is also the opening of two new shops in Lyon: la Charité and la Croix-Rousse.

2018 : Organic milk in the spotlight. The Laiterie de la Côte Roannaise gets its organic certification for its local milks.

2019 : A new shop in Lyon. It’s the opening of a new shop in the Frères Lumière district of Lyon
